Gluten Free Banana Bread
Ingredients
Serves 3
- 3 Overripe bananas
- 1/3 cup melted dairy-free butter
- 3/4 cup white sugar
- 1 egg (beaten)
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- A pinch of salt
- 1 1/2 cups of AKN Organics Cassava flour
- Pre-heat oven to 170° C and grease a loaf pan.
- Mash the overripe bananas in a bowl until smooth and add melted butter.
- Add baking soda, baking powder and salt then mix together.
- Add and stir the sugar, egg and vanilla extract.
- Sift and add the AKN Organics Cassava flour into the mixture
- Pour the batter into a prepared loaf pan and bake for 50 minutes or until a fork inserted in the middle comes out clean.
- Remove the loaf pan from the oven and allow it to cool. (Or if you like it hot, sneak a slice and enjoy with butter and cuppa on the side)
