Spiced Veggie Patties

Ingredients:
  • 4 large white potatoes
  • 1/2 cup AKN organic flour
  • 1 tablespoon oil
  • 1 onion diced
  • 1clive garlic
  • 1 teaspoon curry powder
  • 1/2 a teaspoon of salt
  • 1/3 cup corn
  • 1/3 cup peas
  • 1teaspoon salt
  • 2 eggs, beaten

Method:
1. Wash the potatoes (keep the skin on), pierce them with a fork, and microwave them
for 8 minutes, or until you can insert a knife in easily (or boil until soft).
2. Allow them to cool a bit and peel the potatoes before mashing them in a large bowl.
3. In an oiled pan add the diced onion and sauté until golden.
4. Add in the curry powder, garlic, frozen peas, and corn and stir until the peas and corn defrost.
5. Add this mixture into the mashed potatoes.
6. Add 2 eggs and the flour a few tablespoons at a time, mixing it in until is if fully incorporated before adding more.
7. Line a baking tray with baking paper or a reusable baking mat.
8. Shape the patties, making using about 1/2 cup size of mixture and flattening
them into shape.
9. Bake for 18 mins of until golden brown.

Makes: 9 patties
Cooking time: around 50 mins
